I just tried a really nice recipe for lunch which is sweet potato and eggs breakfast.  It only took like 10 mins to make the longest part was the sweet potato because it was in the refrigerator beforehand.  You got to try this recipe it is so yummy.

Sweet Potato And Eggs Breakfast Recipe


  1. water

  2. 1/2 sweet potato peeled

  3. 4 large egg whites

  4. 1 large egg

  5. 1 tsp olive oil

  6. 2 fresh rosemary sprigs leaves removed and chopped, stems discarded


  • Fill the bottom of the steamer with 2 inches of water; bring to a boil over high heat. Place sweet potato in the top of the steamer; steam for 5 to 7 minutes, or until fork-tender. Set aside.

  • Combine egg whites and egg in a small bowl; whisk to blend.

  • Heat oil in medium skillet over medium heat.

  • Add egg mixture; cook, stirring frequently, for 3 to 4 minutes, or until set.

  • Place eggs and sweet potato on a serving plate. Sprinkle sweet potato with rosemary; serve immediately.

Shortcuts That I used

  • I used some shortcuts in this recipe instead of boiling water for the sweet potato I put it in the microwave on high for 12 mins. Then I cut the sweet potato open with the skin still on and just scooped it out. So basically it was just mashed sweet potatoes on a plate.

  • Instead of four large egg whites, I used my liquid egg whites that are in a carton. I know some of these egg whites that are in cartons are not as healthy as an actual egg but I found one that the only ingredient in the carton is 100% egg whites.

  • Another shortcut that I used in this recipe that I used is rosemary that was in a little jar so I didn't have to chop it up.
